La Curiosa Mussels in Spicy Marinade (Mejillones en escabeche picante)
Plump Galician mussels, sustainably harvested and tinned in a gently spicy marinade of vinegar, paprika, and oil. These are bold and satisfying, with just enough heat to wake up your palate without overwhelming the sweet mussel meat. Ideal as part of a tapas spread or simply forked straight from the tin with a glass in hand.
Wine match: A chilled glass of Godello or a light Mencía works beautifully, especially from Galicia itself. Closer to home, a Clare Valley Riesling with good acidity will pair well.
