A beautifully tender bonito tuna with the clean, delicate flavour that Ortiz is known for, finished with the gentle warmth and subtle fruitiness of Espelette pepper.

The pepper adds a lovely little lift without overpowering the tuna, leaving plenty of room for its rich, meaty texture and naturally savoury flavour to shine.

This is a particularly good tin for eating simply; pile it onto good crusty bread, add it to a tomato and white bean salad, or serve with roasted peppers and a drizzle of the oil from the tin. It also makes a cracking pintxo with a little crusty bread, roasted red pepper and a touch of fresh parsley.

Australian: A cool-climate Pinot Gris, particularly one with good freshness and a little texture.
European: A crisp Albariño from Galicia; fresh, saline and lively enough to cut through the olive oil while complementing the tuna beautifully.
