A playful but well-judged fusion tin: buttery ventresca set against a fragrant, mild green curry. Expect coconut, lemongrass and a touch of lime leaf — aromatic but never overshadowing the fish. Surprisingly elegant and deeply moreish.


Serving suggestion: Lay the fillets over steamed jasmine rice with herbs (coriander, Thai basil) and fresh cucumber. Also great in a soft, warm roti with shredded cabbage.


Wine matches: Gewürztraminer (Alsace) or an off-dry Clare Valley Riesling.
