A beautifully balanced expression of Spain’s beloved Bonito del Norte (line-caught white tuna), prepared in a classic escabeche. The fish is tender and delicately flaky, with a clean, refined flavour that speaks to careful handling and quality catch. The escabeche—typically a warm marinade of vinegar, olive oil, and aromatics—adds gentle acidity, subtle spice, and a savoury depth that enhances rather than masks the tuna. The result is bright, elegant, and quietly complex.
Serving suggestions
Serve at room temperature to let the flavours खुलly open up. It’s excellent simply plated with crusty bread to soak up the escabeche, or alongside roasted vegetables or a simple green salad. Try it with boiled potatoes and a drizzle of the marinade, or flaked into a salad with peppers and olives for a classic Spanish feel. Also works beautifully as part of a tapas spread.
Wine matches
A crisp Spanish white like Albariño is a natural fit, its citrus and saline edge matching the acidity of the escabeche. Verdejo also works well, offering a slightly herbaceous lift. For something local, a dry Riesling is an excellent option, balancing freshness with enough structure to carry the marinade.
