Tender herring fillets paired with a creamy, tangy mustard sauce that brings a gentle sharpness to the rich, oily fish. It’s a classic Northern European combination, with the mustard adding just enough bite to balance the natural richness of the herring. Enjoy simply with rye bread and pickles, or alongside boiled potatoes for a traditional-style supper.

Tasting notes: Rich, buttery herring with creamy mustard, gentle acidity and a subtle sweetness.

Serving suggestion: Serve chilled with rye bread, boiled potatoes, pickled cucumber or a simple green salad.

Wine pairing: A dry German Riesling or an Australian Riesling from the Great Southern.

About Sywan

Sywan is the seafood brand of Schwaaner Fischwaren, based in the small Mecklenburg town of Schwaan in northern Germany. Fish processing has been part of the town’s story for more than 100 years, and Schwaaner Fischwaren continues that tradition today, combining established recipes with modern production.

The company has produced under the Sywan name since 1994.

Herring and mackerel are at the heart of the Sywan range, with the fish prepared in a wide variety of traditional sauces, marinades and seasonings. Their classic herring fillets include tomato, paprika, mushroom and mustard sauces, alongside more contemporary flavours. The company also highlights responsible sourcing, with certifications including MSC and IFS, as well as organic production within parts of the range.

For Something Fishy, Sywan brings something a little different to the range: proper Northern European fish-deli tradition in a convenient tin, with the rich, oily character of herring working particularly well with creamy, tangy and savoury sauces.
