A Tasmanian take on the classic pickled mussel, with plump mussels from Freycinet Marine Farm dressed in a gently spiced pickling liquor inspired by pink gin. Expect a lovely balance of sweet, sour and aromatic spice, with the natural richness of the mussels giving the pickle plenty of depth.
Serve chilled as part of a seafood platter, alongside crusty bread or straight from the tin with a crisp salad. They’re particularly good with a dry Australian Riesling or a Spanish Albariño.
