There’s something pretty special about a good tin of razor clams, and these are a great example of why. The clams are delicate, sweet and distinctly oceanic, with a firm but tender texture and that lovely clean briny flavour that needs very little dressing up.
La Narval carefully cleans the razor clams to remove any sand before gently cooking them and packing them in purified seawater, keeping the focus firmly on the quality of the shellfish.
They’re excellent straight from the tin with a squeeze of lemon, but also make a cracking addition to a seafood platter, a simple salad or some crusty bread with good olive oil. For something a little more adventurous, warm them very gently with garlic, olive oil and a touch of smoked paprika.
Wine pairing: Albariño from Rías Baixas, or an Australian Riesling from the Clare Valley.
