Wild-caught pink salmon from Alaska, preserved in pure water to allow its naturally clean and delicate flavour to take centre stage. The salmon has a firm, generous flake and a mild richness, making it an extremely versatile pantry ingredient. Without the addition of olive oil, it is particularly well suited to recipes where you want to control the seasoning, dressing and other flavours yourself.

The Stock Merchant Provisions
Producer profile
In 2022, The Stock Merchant introduced its premium tinned seafood range, working with established European canneries to bring sustainably sourced fish to Australian consumers. The range combines traditional Portuguese and Italian preserving techniques with an emphasis on responsible fishing, traceability and quality ingredients. Much of the seafood is MSC certified, with fish hand-filleted and packed by experienced canneries. The range also includes wild Alaskan salmon and ocean-cultivated Pacific oysters from South Korea.
A particular feature of the range is the use of certified organic extra virgin olive oil in many of its tins, rather than conventional vegetable oils. There is also a selection of seafood preserved in pure water, offering a more straightforward alternative for those who prefer to add their own oils, dressings and seasonings.
The Stock Merchant's philosophy is centred on good food, honest ingredients and making quality pantry staples accessible for everyday eating. It's a range that brings together convenience, sustainability and a genuine appreciation for seafood.
