These sardines with lemon are bright, clean and beautifully balanced. The fish are plump and silky, packed snugly in olive oil with slices of lemon that gently perfume the tin rather than overwhelm it. The citrus lifts the natural richness of the sardines, adding freshness and a subtle aromatic zing.

Serving suggestion:
Perfect straight from the tin over warm sourdough with a little cracked pepper and flat-leaf parsley. Also lovely flaked through a simple pasta with garlic and a splash of the lemon oil from the tin.

Wine match:
Albariño is the dream here. In Australia, a crisp Adelaide Hills Sauvignon Blanc works beautifully.
